This year we are going to try journaling again in our homeschool day. I have set my oldest homeschooler up with a blog to do her journaling on so that it seems cooler, or more relevant, or will be met with less resistance...hopefully anyway.
I am hoping this will remind me to blog. I liked blogging.
I started blogging when I was going to turn 30 and I felt like it wasn't stressing me out so maybe I needed to reflect on my life more...hahaha, and I also used it as a way to share pictures with my family who at the time lived 8 hours away. Now we all live in the same city, and it isn't such a big deal to send pictures by e-mail...oh how the internet has evolved!
Earlier this year I turned 40 - maybe it is a good time to try to revive my blog...I really am almost 41 so it's not actually as symbolic as I would like...oh how I love symmetry!
I like being 40 - and just as a side note it wasn't stressful for me either - I think maybe getting older is not stressful for me....although my kids getting older kind of is.
Maybe not stressful as much as sad...I really do sometimes wish we could freeze time a little and slow it all down!
So our Journal prompt today is to share a family recipe and detail the steps to making it. I will share the recipe for Baked Chocolate pudding - a family favorite!
This is like a brownie cake that has a sauce that magically moves underneath the cake as it bakes...so good and so easy! Best served with vanilla ice cream!
Baked Chocolate Pudding
1 cup flour
1/4 cup cocoa
1/4 tsp salt
1/4 cup nuts (optional)
3/4 cup sugar
2 tsp baking powder
Mix above ingredients together and add...
1/2 cup milk
2 Tbsp oil
1 egg beaten
1 tsp vanilla
Mix all up in the same bowl and spread into a greased 8x8 pan.
In a separate small bowl mix 1/2 cup white sugar, 1/2 cup brown sugar 1/8 cup of cocoa and sprinkle over the batter in the pan. DO NOT MIX IN. Pour 1 cup of cold water on top and bake @350 for 30 minutes.
This is my husband's favorite dessert - bar none.
